the fudge moratorium
There are very few culinary things that I will not attempt to make more than once. Slow-cooker cacciatore and peanut chicken are on the list, and now, fudge is on the list. Last night I embarked on a four-hour journey to make maple fudge for the Canada booth at the international school's food fair, held today. It seriously took four hours for the whole process, from melting the ingredients to deciding the the soft ball stage had finally been reached to cooling down enough to be put into a well-greased pan. What I pulled out of my fridge this morning was toffee. Not fudge! Even worse, the 250 ml bottle of maple syrup that I used for the recipe cost me the equivalent of $15 Cdn ...

I just came across your blog via somewhere else not sure who's anyway here is a recipe for fudge that you will love it really is awesome I make it all the time with rave reviews from family and friends I am sure you could add 1 tsp of maple flavoring along with the vanilla hope you enjoy this recipe.peigirl(shirley)
Ingredients:
1/2 cup plus 2 tablespoons evaporated milk.
2 cups packed light brown sugar.
1 1/2 sticks (12 tablespoons) unsalted butter, cut into tablespoons.
1/4 teaspoon salt.
1/2 teaspoon vanilla extract.
1 3/4 cups icing sugar.
preparation
Combine milk, brown sugar, butter, and salt in a 3-quart heavy saucepan and bring just to a boil over moderate heat, stirring until sugar is dissolved.
Reduce heat to low and simmer, stirring frequently, until mixture registers 238°F on thermometer and a teaspoon of mixture dropped into a small bowl of cold water holds a soft ball when pressed between your fingers (this will take about 30 minutes).more or less
Transfer to a heatproof bowl. Beat in vanilla with an electric mixer at medium speed, then add the icing sugar a little at a time, beating until fudge is thick and smooth, about 5 minutes.
Spread evenly in an ungreased 8-inch square baking pan. Refrigerate, uncovered, until firm enough to cut, about 30 minutes.
Cut fudge into 32 squares with a sharp paring knife.

Hehe. I've only made cheater-style fudge ... y'know, the kind heavily laden with marshmallow fluff. My g'ma could make the real stuff though ... and something similar in the fruity candy family called "divinity."

Oh ugh! I tried to make fudge for the first ever this year too. And bleh. I watch people all over the tv making it and they make it look so good. Never again I say!
