banana snob

I don't like eating bananas after they get spotty. So ...

Banana Chocolate Chip Muffins

Dry Ingredients

  • 1 cup whole wheat flour
  • ¾ cup wheat bran
  • ¾ cup ground flaxseed
  • ¼ cup mini chocolate chips (though peanutbutter chips are super yummy as well)
  • 1 tbsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt (optional)

Wet Ingredients

  • 1 ½ cups mashed ripe banana (about 4)
  • ¾ cups dark brown sugar (golden sugar works too)
  • ¾ cups buttermilk (but regular milk or yogurt works as well)
  • 1 egg

Preheat oven to 400 degrees F. In a large bowl, mix dry ingredients using a fork. In a medium bowl, beat wet ingredients until well-blended. Pour wet ingredients into dry ingredients and mix until just-combined. Spoon into muffin cups. Bake in centre of a 400 degree F oven for 20 – 25 minutes. Makes 12.
