I don't like eating bananas after they get spotty. So ...
Banana Chocolate Chip Muffins
Dry Ingredients
- 1 cup whole wheat flour
- ¾ cup wheat bran
- ¾ cup ground flaxseed
- ¼ cup mini chocolate chips (though peanutbutter chips are super yummy as well)
- 1 tbsp baking powder
- 1 tsp baking soda
- ½ tsp salt (optional)
Wet Ingredients
- 1 ½ cups mashed ripe banana (about 4)
- ¾ cups dark brown sugar (golden sugar works too)
- ¾ cups buttermilk (but regular milk or yogurt works as well)
- 1 egg
Preheat oven to 400 degrees F. In a large bowl, mix dry ingredients using a fork. In a medium bowl, beat wet ingredients until well-blended. Pour wet ingredients into dry ingredients and mix until just-combined. Spoon into muffin cups. Bake in centre of a 400 degree F oven for 20 – 25 minutes. Makes 12.
