How can cake ever be a bad thing?
I know that many twenty-somethings look at each year that brings them closer to thirty with a degree of sadness, but I haven't yet adopted that philosophy. I’m more inclined to celebrate each birthday because it means that I can eat cake without feeling at all guilty about indulging myself! So here it is, folks - that elusive Diablo cake from the Brulee Patisserie:

My wonderful Chris explained that he was really relieved that they had one of my very favourite cakes left when he got to the bakery on Saturday (not that my birthday was Saturday, but the bakery is only open on Saturdays). Thanks to the cooking class I took with the proprietor of Brulee, I'm confident that the cake is made of a alternate layers of a chocolate souffle cake and a chocolate mousse-type of filling, topped with chocolate ganache. There's a complexity of flavours in the mousse, though, and that's the mystery. Right now I suspect black pepper and cinnamon … but happily there's still a lot of cake left to snack on and refine my hypothesis :)

*drool* Happy Birthday and on my birthday you can always send me a piece of that! I looks absolutly amazing!! Enjoy, you are right it comes once a year where you can feel no guilt!
